Do your kids crave pizza for every meal, including dessert? I'm Lee Woodruff in the kitchen with Family Fun. No one can resist this cookie crusted ice cream pizza.
You'll need a 1/4 cup of butter, three tablespoons of cocoa powder, a cup of sugar, one large egg, one teaspoon of vanilla extract, one and 1/3 cups of all purpose flour, 1 1/2 teaspoon of baking soda, an 1/8 teaspoon of salt, two tablespoons of milk, 1/2 gallon of ice cream, we like strawberry for pizza color. You'll also need canned whipped cream and various decorative candies. Line a large cookie sheet with aluminum foil and spray it with cooking spray. Cream the sugar and butter together in a large bowl. Now, add the egg and the vanilla extract. Mix the flour, baking soda, cocoa, and salt together. Add the dry ingredients to the wet mixture and blend them in a medium speed. Add the milk and continue to blend. Let the dough sit for two to three minutes. Scrape the dough into the center of the buttered foil and spread the dough into a more or less level circle, ten inches in diameter. Pull up the edges of the foil to form a circular shape. Refrigerate the dough for ten minutes while you heat the oven to 350 degrees. Bake the crust on the center oven rack for ten to fifteen minutes. Transfer it to a cooling rack and cool it until it is just warm to the touch. Invert the crust onto a second cookie sheet and gently peel off the foil. Invert it again onto the sheet, or a serving tray, and refrigerate for thirty minutes. Smooth the layer of slightly softened ice cream, one half inch to one inch thick, evenly over the crust. Decorate with canned whipped cream and candies. If you're presenting the pizza whole, consider using lines of whipped cream to draw slices. Transfer the pizza to the freezer until you're ready to slice and serve.
