When the weather's warm move the meal outside with this delicious dish. I'm Lee Woodruff at the grill with Family Fun. These chicken yumsticks are a breeze to make in your own backyard or at a park.
Here's what you'll need: two thirds of a cup plain low fat yogurt, two teaspoons of brown sugar, two teaspoons of hot sauce, plus a little extra to eat with the chicken, one teaspoon of ground cumin, two garlic cloves minced, a quarter teaspoon of salt, eight chicken breast halves, and lemon wedges if you like. You'll also need eight skewers. Combine a few tablespoons of the yogurt with the brown sugar in a medium sized bowl and mix until well blended. Add the remaining yogurt, hot sauce, cumin, garlic and salt. Cut each chicken breast half into six to eight equal pieces, add to the yogurt mixture and stir until well combined. Thread the chicken onto eight skewers. Carefully place in a plastic container or a double gallon sized zip top bag to guard against leaks. Chill for thirty minutes to two hours. If you're going on a picnic just package the chicken in a cooler and go. Now it's time to really heat things up. Grill the kabobs over medium heat, rotating sides every few minutes until cooked through, about ten to fourteen minutes total. Serve with extra hot sauce and lemon wedges for 6 to 8 people. For a healthy side dish why not cook up come veggie kabobs to serve alongside the chicken. And there you have it, the perfect picnic fair.
