Here we are downtown at the world famous Cafe Du Monde in New Orleans. The coffee we sell here is called coffee and chicory, we've been serving for over hundred and forty years. What you're looking at right now is where beignets are prepared. This is the sheeters that actually cut the beignets on. They throw them into the deep fryer and after they're fried that put him in the bin. To-go people take it from this side and the waiters take it from the other side. Cafe Du Monde has been around 1862, and it's been in our family since the early 1940's. How many we serve a year? Every time someone asks us we just tell them millions, we really don't know. Its beignet, we tell people it's B-E-N-Y-A-A, a French word meaning French square donut, that's covered with a lavish amount of a powdered sugar. People that settled here, this was one of their traditional breakfast items, that and the Cafe Au Lait
