Description
I love cupcakes and candy (who doesn't, right?!?) so what could be better or sweeter than making cupcake candy!?! :) DOUBLE YUM!!!
These are classic mini chocolate and vanilla cupcakes covered in a Oh so yummy, but very simple and fake Chocolate and White Chocolate Ganache." The cupcakes are decorated with Valentine's candies and of course served in the top of a Heart Shaped Candy box top to add a little extra sweetness and fun for my special Valentine! (Who was especially thrilled as he made out with both a box of candy and a box of cupcakes! :)
Ingredients
-Can of Vanilla Frosting
-Can of Chocolate Frosting
-White Chocolate melting candy (white or red will work)
-Food Coloring
-Your Favorite Valentine's Day candy (Have fun with this one, but for me it was red m&ms, heart shaped chocolated, conversation hearts, valentines sprinkles, etc!)
-Tube of your favorite decorating icing for decorating
How to Make
Make cake mix as directed.
-Line mini-muffin pan with festive mini-cupcake liners
-Pour batter into mini-muffin pan
-Bake for ~14 mins (on average for the mini's)
-Let cool.
Prepare Chocolate Fake Ganache:
-Scoop out half can of chocolate icing into microwaveable safe bowl
-Put icing in Microwave for 45 seconds
-Stir quickly and thoroughly
-Dip cupcakes in icing
-Let excess icing run off
-Smooth as necessary
-Add candy on tops as desired
-When Ganache semi-hard add decorator touches (ie. making hearts, writing LOVE, HUG, etc on top using tube of icing)
HINT: Depending on type of finish you want with the chocolate topping you may want to add a few melting chocolate to icing before hardening (white or dark chocolate). Adding the melting chocolate to the icing will help make ganache into a harder coating of icing on top of the cupcake which is nice for neatness, but will in make it look less shiny. It's a tough trade-off as I love the shiny finish, but it is definitely messier and thus harder to serve/transport. Luckily though both ways taste great!
Prepare White Chocolate (red and pink) Fake Ganache
-Scoop out half can of vanilla icing into microwaveable bowl
-Put icing in Microwave for 45 seconds
-Add in 10 Red melting chocolates (if you only have white melting chocolate simply add red or pink food coloring too)
-Stir quickly and thoroughly
-Dip cupcakes in icing
-Let excess icing run off
-Smooth as necessary
-Add candy as desired to decorate
-When Ganache semi-hard add decorator touches (ie. making hearts, writing LOVE, HUG, etc on top using tube of icing)
HINT: The vanilla icing and red chocolates will likely melt into a pink Ganache, to make more red after coloring a few pink ones, simply add red food coloring as desired.
Home Made for the Holidays
- Avoid clutter. Keep the background simple -- your cupcake or sweet treat is the star!
- Daytime, natural light is best. If your area is bright enough, try taking the photo without the flash.
- Upload a horizontal photo. If you crop the image on your computer, make sure you keep a landscape 4:3 aspect ratio.
- For best results, make your image 1200x900 (or "save for web").
- With a digital camera, you can take as many photos as possible and choose the best one. Have fun!
