Not only do I appreciate the no-cook solution, I also enjoy the ease of few ingredients, and any recipe that passes those two requirements is high on my list of "must try." Recipes that have five or less ingredients are great, but a mere three is awesome, especially if there's no cooking involved.

Green Tomato Salsa

I think, in honor of my 39th birthday today, I'll go and pick the green tomatoes and get started on one of my favorite tomato dishes, Fried Green Tomatoes. For the ones left over, I'll make a green tomato salsa. I'd love if they were red and ready to be eaten as is, but that's part of that versatility that I so love about tomatoes.

Pennsylvania Dutch Dressing

Usually at our house I use spinach fresh in big green salads or on sandwiches instead of lettuce. Several of the kids really like creamed spinach, so I make that too. The Pennsylvania Dutch make a hot bacon dressing that they most often pour over dandelion greens. I like to have it over spinach. This recipe is the "real deal" and it's worth a try.
