Potato Soup: In a stockpot combine: 6 cups peeled, diced potatoes 1 1/2 cups shredded carrots 1/2 cup finely chopped onions 1 teaspoon salt 1/4 teaspoon pepper 4 chicken bouillon cubes or equivalent in powdered or paste chicken base Cover with water one inch above vegetables. Cook until tender, about 15-20 minutes. Do not drain! In a saucepan, heat 6 cups milk until tiny bubbles form around the edge of the pan. Remove 1 1/2 cups of the milk. To the 1 1/2 cups milk add 2 Tablespoons butter and 1/2 cup flour. Stir with a wire whisk until smooth. Add the remaining hot milk to the pot with the veggies and then stir in the thickened milk. Simmer for 15 minutes over low heat.
I'll pull out my potato soup recipe first thing in the morning and then I'll pass it along to you. Thanks for asking for it.
LOL, don't let me fool you. My teenagers are perfect (in my mind) and spoil me like you wouldn't believe. When they were younger it was just the 3 of us and they are my rock. I am very lucky to have them. They have their typical teenage moments but nothing too harry scarey. My oldest started college this year and I've been going bonkers missing him. He comes home tomorrow night and I can't wait to see him. They live with their dad now and have for 8 years now. I still know more about them then he does and he calls me when he can't get them to answer their phones. It's funny because you'd think they still live with me. I know where they are and he has to search for them. Poor guy, if he only paid attention:) Oh well, hope your new recipe is a huge success! I love to eat turkey any way it comes (except maybe pickled, but I don't know if you can really do that to turkey) Have a great week and write whenever you can. Happy feasting. Michelle
