We went Mid to end of Jan one year. It does get quite chilly at night. The whole week was a pants and long sleeve shirt kind of week for us. But, like tsizemore4 said, the crowds were low, and the sun was out for most of the week. I would probably avoid the schools mid winter break(usually around the third week of Feb.) if you can. I would imagine that is when most people with school age kids would book their trips.

Hey! We went for Valentines Day once. It was during a strange Florida cold snap so it was 32 at night and 50s during the day. But that was at the beginning of the week. The last 2 days were 75 - 80. So be prepared for weather. Other than that it was great. Low crowds, gorgeous sunshine and the girls did swim in the Caribbean's pool. We spent Valentines Day at Epcot and had lunch with the princesses at Akershus. It was very nice.
