Lobster Rolls

2 cups of lobster meat from steamed lobsters (total of 2 to 2.5 lbs, in shell)
1/2 cup mayonnaise
1 celery stalk, diced finely
3 scallions, thinly sliced
1 tablespoon dijon mustard
1 tablespoon Italian parsley, chopped finely
Juice from 1 lemon
1/2 teaspoon salt
1/2 teaspoon black pepper

1 loaf of French bread
4 tablespoons butter
Shredded lettuce

Combine all ingredients except lobster, butter and lettuce, in a large bowl. Coarsely chop lobster meat and fold into dressing. Split bread loaf open about 3/4 of the way (leaving top and bottom attached). Cut into 4 equal portions. Buttter the inside generously and toast under broiler until golden brown. Fill with shredded lettuce and lobster salad.
