Recipe for tonight's dinner ... Chicken noodle soup
2 chicken breast, thawed, chopped.
Four cans chicken stock
3 cubes chicken boullion
2 Carrots
2 stalks celery
1 onion
1 tbsp garlic, minced
dash salt and pepper
1 bag pasta (anything but spaghetti works)
1 tbsp olive oil
Saute carrots and celery at the bottom of a soup pot until softened, then sweat the onion. Add garlic, salt and pepper.
Pour in 4 cans of chicken stock, and the boullion cubes. Add chicken and pasta. Boil for 20 minutes (until chicken is white, and pasta is tender)
Serve with crackers!
This soup is great for fighting a cold. All the love goes in - one step at a time. The steam clears up the congenstion, and the veggies remind the immune system to "fight". Great for back to school, when all the kids get sick over and over again for a month or two.
