Family Meals: Quick Breakfasts

We all know that breakfast is the most important meal in the day, but with the rush of getting everyone dressed and out the door morning, making a healthy, substantial start can be tough. So, how do you make sure the kids and the adults in your household get off to school or work right? Our easy recipes are ideal for busy families with no time to sit down for a family breakfast.

Power Muffins
Makes 12 muffins

*Time Saving Tip: Line a muffin pan with paper liners and fill halfway with batter. Place the entire pan in the freezer and when frozen, transfer cups into a plastic freezer bag. When needed, remove only the frozen muffins you need (remember to pop them in a pan again before going in the oven!) and bake.

2 1/4 cups all-purpose flour
3/4 cup sugar
1 teaspoon cinnamon
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
2/3 cup plain low-fat yogurt
4 tablespoons melted butter, unsalted
1 large egg
2 1/2 cups shredded carrots
1/4 cup flax seeds (optional)

Preheat oven to 375 degrees.

In a large bowl, mix flour, sugar, cinnamon, baking powder, baking soda and salt.

In another bowl, whisk together yogurt, butter and eggs. Make an large indentation with your finger in the middle of the flour mixture and stir until just combined. Add carrots and flax seeds (if using).

Spoon batter into a lined muffin pan and bake for 20 minutes. Or, freeze up to two months (see tip above) and bake as needed.

Super Smoothie
For 1 adults or 2 children

2 cups milk (we prefer soy milk)
1 cup vanilla (or flavored) yogurt
2 oz. silken tofu
1 tbsp. flax seed oil
1 banana
1 cup frozen fruit of choice (strawberries, blueberries, mango)
1 cup orange juice

Mix in a blender until smooth. Add ice cubes for a thicker smoothie.

Waffle Breakfast Sandwich
serves 1

2 frozen multi-grain waffles
2 tbsp. peanut or almond butter
1 apple, sliced thin (preferably Granny Smith or Fuji varieties)

Toast waffles and spread nut butter generously on one and top with Top with apple slices and complete the "sandwich" with the other waffle.
