CNN anchor Soledad O'Brien's New Year's resolution was to
cook dinner more often for her family (as opposed to ordering
takeout), despite a hectic career, and clean-up theirsnacking
habits with healthier options.
So, she enlisted the help of ModernMom.com's food & cooking contributor Cat Cora (aka Food Network's Iron Chef) who cleaned out Soledad's kitchen, substituted healthy staples and snacks and gave her some healthy alternatives to their usual dinner choices.
A family favorite in the O'Brien household, tacos are a quick dinner option that Soledad can whip together after a long day at work. Cat lightened up the typical taco recipe with ground turkey, black beans, and lettuce cups.

Soledad also wanted to substitute her
family's snacks with healthy options. After throwing away
choco-holic Soledad's candy stash, Cat taught the girls how to
make tasty banana yogurt pops.
Banana Yogurt Pops
serves 4
You'll need:
2 small bananas
1 cup flavored yogurt (your favorite flavor)
granola
popsicle sticks
- Peel and cut bananas cross-wise in half
- Insert popsicle stick into cut ends to form handles
- Dip and coat banana halves in yogurt. Coat well.
- Roll yogurt-dipped bananas in granola.
- Freeze for a minimum of five minutes
- Enjoy!
Note: Pops can be stored in freezer in an airtight
container for up to one week.
