I can bring home the matzo! Break it up in a bowl. . .

Okay, this is not a great shot, but I just wanted you to see that the look you're going for is scrambled eggs. At least that's how I make it. You know, the *right* way.

Ah, you are good people, to ask after a matzo brei recipe--and to offer your own! Thank you. Matzo brei is a traditional Passover concoction, and there are as many opinions about its proper preparation as there are Jews in the world: you could make it like a big pancake served with syrup and jelly (as if!) or like this, the correct way, where it's scrambled like eggs and eaten with salt and pepper (and maybe a little Tabasco, sorry Grandma). Happy Passover!

Matzo Brei

Serves 2 (easily doubled or halved)
Total time: 10 minutes

3 matzos
2 eggs
½ teaspoon kosher salt (or half as much table salt)
Freshly ground black pepper
1 tablespoon butter

Begin by breaking the matzos up in a bowl into smallish pieces--more like a square inch than like crumbs--which is a great job for kids. Cover the matzo with hot tap water and leave it while you crack the eggs into another bowl and beat them well with a fork. Now pick up handfuls of the soggy matzo and wring it out, then add the wrung matzo, with salt and pepper, to the bowl with the eggs. Stir it together well. Melt the butter over medium heat in a medium nonstick skillet, and when it's hot and foamy, add the egg-matzo mixture. Cook it the way you would scramble eggs, pushing it in and over from the sides with a spatula, and stirring constantly, until it looks cooked and mostly dry, about 2 minutes. Eat in good health.
