4 pounds boneless skinless chicken breasts, cut into 1⁄2-inch pieces
1 tablespoon olive oil
1 package (1 ounce) Italian salad dressing mix
2 cups sliced mushrooms
1 cup chopped onion
1 can (10 3⁄4 ounces) condensed low-fat cream of chicken soup,
undiluted
1 bag (10 ounces) frozen broccoli florets, thawed
1 package (8 ounces) low-fat cream cheese, cubed
1⁄4 cup dry sherry
Hot cooked pasta
- Toss chicken with olive oil. Sprinkle with Italian salad dressing mix. Place in 5-quart CROCK-POT® slow cooker. Cover; cook on LOW 3 hours.
- Coat large skillet with nonstick cooking spray. Add mushrooms and onion; cook 5 minutes over medium heat or until onions are tender, stirring occasionally.
- Add soup, broccoli, cream cheese and sherry to skillet; cook and stir until hot. Transfer to 4 1⁄2-quart CROCK-POT® slow cooker. Cover; cook on LOW 1 hour. Serve chicken and sauce over pasta.

This recipe is great!! I just added some minced garlic, pepper, salt, and chopped up roasted red peppers!! It came out amazing! I also added a little extra cream cheese and sherry. My husband keeps hinting to get the crock pot out so I can make it again. It truly has become another family favorite!! I highly recommend on making it, just add little extras to make it yours.

I made this today with a few adjustments. I used 2lb cut up chicken, 1 can cheddar cheese soup, 1 cup cream of broccoli soup, 1 packet of zesty italian dressing, 1/2 cup diced onions, 1 cup sliced mushrooms, 2 cups steamed broccoli, 8oz low fat cream cheese. Crock pot set on low. Added chicken, coated with dressing packet. Sauteed onions and mushrooms, added to chicken. Added soup. cooked for 5 hours. Mixed in cream cheese and broccoli. Cooked for 1 more hour. Served over egg noodles. I was looking for something the kids would eat too- They loved this- cleaned their plates! I was worried it would be a little *blah* for the parents, but we liked it too. Could have added a little black pepper. Was surprised at the outcome.
