Chicken and Sweet Potato Stew

Ingredients

    4 boneless, skinless chicken breasts, cut into bite-size pieces
    2 medium sweet potatoes, peeled and cubed
    2 medium Yukon Gold potatoes, peeled and cubed
    2 medium carrots, peeled and cut into 1⁄2-inch slices
    1 can (28 ounces) whole stewed tomatoes
    1 teaspoon salt
    1 teaspoon paprika
    1 teaspoon celery seeds
    1⁄2 teaspoon freshly ground black pepper
    1⁄8 teaspoon ground cinnamon
    1⁄8 teaspoon ground nutmeg
    1 cup nonfat, low-sodium chicken broth
    1⁄4 cup fresh basil, chopped

Directions

  1. Combine the chicken, potatoes, carrots, tomatoes, salt, paprika, celery seeds, pepper, cinnamon, nutmeg and broth in the 4 1⁄2-quart CROCK-POT® slow cooker.
  2. Cover; cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.

Tip
You may double all the ingredients when using a 5, 6 or 7-quart CROCK-POT® slow cooker.

Note
This light stew has an Indian influence and offers excellent flavor without the fat.

This came out perfectly. My wife and I both enjoyed it. The flavors melded very well. We will be making this again soon.

I LOVED this. I'm not sure how it got only two stars. I served it over brown rice, which was a great way to soak up the delicious broth. I drained the tomatoes before adding them, otherwise I think there would have been too much liquid. I also let it cook for a while with the lid off to evaporate some of the water. I used boneless chicken thighs instead of breasts, which I think do much better in a slow cooker. My mother AND father in law both loved it, and they have very different tastes. She's a very healthy eater and he'd eat pepperoni pizza every day if he could, so it's always a challenge to find something to please both of them. My two year old daughter also liked it (carrots and sweet potatoes are two of her favorite foods). This is my new favorite slow cooker recipe.

Oh no! I just bought all the ingredients and was going to try this. Boo! Maybe I will try changing up the recipe a bit.
