Bev's Mac and Cheese

From the Disney Family Editors: Boxed macaroni and cheese is full of preservatives, but a homemade version is just as tasty, and nearly as fast to prepare.

Use your microwave to cook up a simple, creamy sauce of milk, flour, butter and shredded Cheddar cheese to pour over cooked macaroni. Try experimenting with different varieties of cheese to make this homey dish your own.

Yield:4 to 6 servings
Ingredients
 1 cup elbow macaroni
1 cup milk
3 tablespoons all-purpose flour
salt and pepper to taste
2 tablespoons butter
1 cup shredded Cheddar cheese
Directions
  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
  2. In a microwave-safe bowl, combine milk, flour and salt and pepper to taste; whisk or beat until smooth. Add butter and cheese; microwave on high for 5 minutes and whisk until smooth. Microwave for an additional 4 to 5 minutes and whisk or beat until smooth and no lumps remain.
  3. Add cooked pasta to mixture; stir and serve.

I made this highly enjoyable dish for my two children, Kirstin and David, and they just loved it! I even added my own special ingredient: purple food coloring! You see, I put the food dye in the cheese. Purple is their favorite color and when they saw it they just stuffed their cute li'l faces!

This was a perfect Recipe for my 4 year old as is (and he doesn't like many foods) and then for my husband I added ham and some French's Fried Onions - he loved it. I did add some shredded cheese to the top of both before serving. Thank You!
