Tofu Tacos II

Our customers have been requesting this recipe for awhile, and now we know why! The addition of refried beans creates a pleasing texture. Even meat-eaters will love these tofu tacos.

Ingredients
 1 (12 ounce) package silken firm tofu
1 (1.25 ounce) package ORTEGA(R) Taco Seasoning mix
1 (16 ounce) can ORTEGA(R) Refried Beans
1 package (12) ORTEGA(R) Taco Shells, warmed
SARGENTO(R) Fancy Shredded Colby-Jack Cheese
sliced green onions
chopped fresh cilantro
ORTEGA(R) Thick & Smooth Taco Sauce
Directions
  1. PLACE tofu and seasoning mix in food processor; process until smooth. Transfer to a medium, microwave-safe bowl. Fold in beans. Microwave on MEDIUM (50%) power, stirring halfway through, for 2 to 3 minutes.
  2. FILL taco shells with tofu mixture. Top with cheese, green onions, cilantro and taco sauce.

I never tried this, but I think I will try it tonite for my family. They love to eat tacos and mexican style foods. It sounds good and easy to prepare. Thanks!
