Watermelon and Feta Salad
When I first heard of watermelon being paired in savory salads with salty cheeses like feta, I was somewhat skeptical. But after my first bite, any doubt I had was erased. The salty, sweet and sour flavors harmonize beautifully and sing the song of summer. Grandma was onto something when she salted those watermelon slices! If you are feeling extra adventurous, try mixing in pitted kalamata olives or halved cherry tomatoes. Wow your guests at your next barbecue or potluck with this unusual and beautiful salad.

- Remove and discard the peel and rind from the watermelon and cut flesh into 1/2 inch cubes.
- Gently toss watermelon with vinegar and oil in a mixing bowl. Place in a shallow serving dish.
- Crumble the feta cheese over the watermelon cubes and sprinkle with the minced mint. Season with salt (only a pinch as the feta will be salty) and pepper and serve immediately.
