Turkey Maple Sausage

Ground turkey from the supermarket makes a healthy and delicious alternative to fat-laden pork sausages. Try these stuffed into a buttermilk biscuit or alongside some fluffy pancakes. These sausages are so flavorful and moist you won't miss the calories at all. Make sure to prepare the sausage mixture the night before so they are ready to cook in the morning.

- In a large bowl, mix together turkey with the rest of the ingredients except the oil, making sure everything is incorporated evenly. Refrigerate for 1 hour, so flavors can meld.
- Preheat a large skillet over medium heat. Shape the sausage into 12 patties, about 2 1/2 inches in diameter. Heat the oil in the skillet then brown the sausages for 2 minutes on each side. Reduce heat to low and cover pan and continue to cook, turning sausages occasionally, for 6 minutes more or until sausages are crisp and cooked through and no longer pink in the middle. It may be necessary to cook sausages in two batches. Serve immediately.
