Gingerbread Waffles

We love waffles at our house, but served like this, they are especially good. All the sweet spiciness of gingerbread rings through, and though these are wonderful during the holidays, they're great any time you want an extra special breakfast. Try serving them with whipped cream and applesauce.

- Preheat waffle iron and grease with some cooking spray.
- Mix the dry ingredients together in a large bowl. In another bowl, whisk together eggs, buttermilk, pumpkin puree, sugar, molasses and butter. Add wet ingredients to the flour mixture and whisk until smooth.
- Fill each section of the waffle iron with about 1/3 cup of batter (or amount indicated in the appliance manual). Cook according to manufacturer's instructions. Serve immediately or keep warm in a 200 degree oven.
