Sweet Potato Soufflé

Hands-On Time: 5min
Cook Time: 55min
Ready In: 1h
Yield: 8 servings
sweet potato souffle

This classic southern dish is deservedly showcased at many a holiday feast. Though sweet potatoes might taste like dessert, they are actually packed with nutrients, including vitamins A and C, and most kids will readily gobble them up, especially when prepared this way.

Ingredients

Topping

Directions

  1. Preheat oven to 350 degrees.
  2. Beat sweet potatoes, brown sugar, butter, eggs, rum, cinnamon and salt together with a wire whisk until smooth and fluffy. Pour into a greased 2 quart baking dish.
  3. Mix together ingredients for topping in a medium bowl. Sprinkle over the top of the sweet potato mixture and bake for 45-50 minutes or until a knife inserted near the center comes out clean and the top is firm and golden. Serve warm.

My mom has been using basically this recipe for years... This beats candies yams ANY day! We don't add rum and at first glance I think there are a few different spices.... but its the same idea and topping for sure.
MY favorite thing to do is dip my turkey into it (I am not a big meat eater, but I always have a little ;) )
