Pumpkin Chocolate Chip Muffins

Chocolate makes it all better…or so the saying goes. And it's certainly true for these muffins. Perfectly spiced and wonderfully moist, they're made even more delicious by the tiny bits of chocolate nestled within.

Directions

  1. Preheat the oven to 350 degrees. Grease a muffin tin, or line with paper.
  2. In a large bowl, mix together pumpkin puree, oil , eggs and sugar until well blended.
  3. In another bowl, whisk the flour, baking powder, pumpkin pie spice, baking soda and salt. Add to the pumpkin mixture and whisk until just combined. Fold in the chocolate chips.
  4. Spoon batter into prepared muffin tin, filling each about 2/3 full. Sprinkle a few more chips on top of the muffins.
  5. Bake for 25-30 minutes or until a toothpick, inserted in the middle of the muffin comes out clean. Cool in the pan for 5 minutes, then remove to a rack.

I printed up the recipe to make tomorrow for breakfast, using your print feature. Everything printed except for the list of ingredients! Guess I'll have to do it the old fashioned way by copying & pasting. Anxious to try the recipe.

I made these last week. I agree about the smell, but I'm not too big on the smell of pumpkin anyway so it's probably that. I probably put half the amount of chips in, and didn't put any on the top and they're perfect. I actually froze most of them, and they're good snacks to throw in a bag and eat later (once thawed) or right away, frozen, since they don't freeze solid. Great recipe!

Made these tonight. Thought they tasted much better than they smelled! After smelling them I thought my kids would NEVER eat them. Surprisingly they loved them! Maybe because they were loaded with chocolate chips? I'm not a picky person and I love chocolate but both my husband and I thought these were way too chocolatey. I left out the extra chips on the top and they were still too chocolatey. I will make these again but I'll put even less than the 1/2 cup they recommended. Overall they were pretty good.
