Quick breads come by their name honestly. In fact, this one takes just 5 minutes to mix together -- then you can sit back and relax as the fragrance of freshly baked goodness permeates your home. Wonderful for breakfast, toasted and served with a bit of cream cheese and apple or pumpkin butter, this sweet and hearty loaf also makes a fine accompaniment to a bowl of hot soup.

Directions

  1. Preheat oven to 325 degrees. Grease 8 x 4 inch loaf pan.
  2. Mix dry ingredients together in a large bowl. Add buttermilk, egg and molasses and whisk to combine.
  3. Pour into prepared pan, sprinkle with oats and bake for one hour, or until toothpick inserted near the center comes out clean.
  4. Cool in pan for 15 minutes, then turn out onto cooling rack. Cool completely. Slice and serve with butter, pumpkin butter, or jam.

This bread is so easy and so good! I sub'd half of the molasses for honey...it was so tasty!

This bread is delicious!! I'll definitely make it again! It has the consistency of quick bread, it's not a light bread, it's a heavier bread, but very tasty, for those of us who find breads made with whole wheat flour wonderful.

I was hoping this would be like the bread at the Outback. It was more moist and dense than that, but for me, that's not necessarily a bad thing. My family loved it, even my picky son. We ate it with dinner, untoasted, with smart balance spread to counteract the slight sweetness to the bread. It was perfect! We ate the leftovers for breakfast the same way. Will try adding strawberry preserves come lunch time.
