My three children love this soup and it's very quick and easy to prepare and a complete meal in a bowl. Include this in a thermos in your child's lunch box when the weather gets cold. For a vegetarian version, leave out the shredded chicken and use vegetable broth. As well as being rich in antioxidants and minerals, corn is packed with fibre to help keep your child regular.

- Melt the butter in a large saucepan over a low heat and sauté the shallot for 5 minutes or until soft. Add the potato, corn, and broth, then bring to a simmer and cook until the potato is soft. Blend half of the mixture until smooth, then return to the pan and stir in the cream. Season to taste.

Stir in the shredded chicken. If you wish, serve sprinkled with a little chopped parsley.
Recipe Tip: To improve heat retention, rinse the thermos with hot water before pouring in hot soup.
