The apple brings out a succulent flavour in these chicken burgers. Shaping them into teddy bear faces is easy and quick and will add oodles of child appeal.
Yield: 6 Teddy Bears
Ingredients
4 boneless, skinless chicken breasts
1 leek, white party only, very finely chopped
1 apple, cored but not peeled, and diced
3 to 4 fresh sage leaves, chopped, or1 teaspoon dried sage
1 chicken stock cube, finely crumbled
1/2 lightly beaten egg
3 tablespoons vegetable oil
Decoration:
Carrot
Peas
Olives
Sweet red pepper
Apple
- Chop the chicken breasts in a food processor for a few seconds. Transfer the chicken to a mixing bowl and stir in the remaining ingredients except the vegetable oil.
- Form into 6 teddy bear shapes about 3/4 inch thick and 3 1/2 inches across. Sauté in the vegetable oil for 12 to 15 minutes, turning halfway through, or until golden and cooked through. Decorate with eyes, nose, and a mouth.
