Chocolate Muffin Ice Cream Cones

A fun way to present chocolate muffins is to bake them in flat-bottomed ice cream cones, which you can buy in the supermarket. You can cheat by using a package of muffin mix.

Directions

  1. Add the cocoa powder to the muffin mix. Following the package instructions, mix together the water, oil, and eggs and stir in the muffin mix.
  2. Preheat the oven to 350˚F. Wrap foil around the cone bases and place upright in an ungreased muffin pan. Fill each cone with about 3 tablespoons of the muffin mixture. Do not overfill the cone or it may bake over the sides. Gently tap the bottom of the cones with your hand to settle the batter.
  3. Place the cones in the oven and bake for about 20 minutes. Allow to cool completely. Ice the tops with the vanilla frosting that you have tinted with assorted food coloring, and decorate with colored sprinkles.
