Tomato soup is a favourite with everyone, and this one is particularly delicious.

- Heat the oil in a saucepan and sauté the onion and carrots for 5 minutes. Add the garlic and sauté for one minute. Add the tomatoes, tomato paste, sugar, broth, bay leaf and seasonings and bring to a boil. Reduce the heat, cover and simmer for 20 minutes. Remove the bay leaf.
- Transfer to a blender and blend until smooth.

Return the soup to the pan. Add the cream and basil (if using) and reheat.
