The light batter and zesty fresh lemon make this favorite chicken recipe really tasty and a pleasure to eat.

Directions

  1. Put the chicken in a bowl and toss with the soy sauce. Leave to marinate for 30 minutes.
  2. To make the sauce, whisk together the lemon zest and juice with the sugar, water and cornstarch in a small saucepan. Bring to a boil, whisking constantly until thickened, then keep warm.
  3. Meanwhile, heat the oil in a large heavy-based saucepan. Whisk together the egg yolk and cornstarch in a small bowl to make a batter. Toss the chicken in the batter and fry for three to four minutes on each side until golden and cooked through.
  4. Transfer to a plate and spoon the warm lemon sauce over the chicken. Scatter the scallions over the dish before serving.

I batter my chicken with 1/4 c. cornstarch and 1 egg white, whisk well before adding chicken. The egg white may make the batter a little less goopy. Hope that helps!

If you want to do a little doctoring, add some capers.....YUM!!! :-) My 6 year olds LOVE this recipe!

This recipe was DELICIOUS! My entire family loved it. We did double nearly all the ingredients (except for the chicken) but with those changes, it came out perfect! Yes the batter looks goopy, but if you put the chicken into it, toss, and then place into a hot pan, it comes out great (but again, we did double those ingredients). We will definitely make this recipe again!
