Apricot Cookies
These are my son's favorite cookies. They are a rather unusual but totally irresistible combination of dried apricots, cream cheese and white chocolate. They take just a few minutes to prepare and you will find them dead easy to make even if you have never made cookies before. This is also a good recipe to make with your kids.

- Preheat the oven to 350 F.
- In a large mixing bowl beat together the butter and cream cheese. Add the sugar and beat until fluffy. Gradually add the flour, then fold in the apricots and chocolate. The dough will be quite soft but don't worry!

Drop the mixture by heaped teaspoons onto non-stick or parchment paper-lined cookie sheets, spacing well apart, and bake in the oven for about 15 minutes or until lightly golden. Let cool on the cookie sheets for a few minutes before transferring to a wire rack to cool completely.

They look awesome, I'll try them without the apricots though otherwise I'd have to spend the whole afternoon in the bathroom !! Shame on my sensitive tummy.
