Curried Waldorf Salad
This salad is bursting with flavor and texture: it's crunchy, sweet, juicy, tangy, rich and, thanks to a hint of curry powder, just a little bit mysterious. Of course, if your kids will object to the curry, feel free to omit it -- but try sprinkling a bit on your own portion, or mix some into the leftovers for tomorrow's perfect mom lunch.

Yield: 4 servings
Ingredients
3 stalks celery, sliced
2 red apples, diced
1 cup seedless red grapes, halved if large
1/2 cup walnuts
1/2 cup Hellman's or Best Foods mayonnaise
2 tablespoons lemon juice
1 teaspoon sugar
1/2 teaspoon kosher salt (or half as much table salt)
1/2 teaspoon curry powder (optional)
Directions
- Place the celery, apples, grapes, and walnuts in a large bowl.
- Whisk together the remaining ingredients and toss with the salad until just coated.
- Serve immediately or refrigerate and serve very cold.
