Pita Pizza Pockets
After school can be a tough time for little tummies. Often kids come home famished, but dinner time is just around the corner. What to serve? Pita Pizza Pockets are just enough to tide them over until dinner without going overboard. Half a pita for little ones or two halves for older kids should work well.

Yield: 4-8 servings
4 whole wheat pitas
2 cups shredded mozzarella cheese
1 cup pizza sauce
2 ounces sliced pepperoni
- Cut pitas in half crosswise, making 2 pockets each.
- Fill each pita half with 2 Tablespoons pizza sauce, 1/4 cup mozzarella and several slices pepperoni.
- Microwave for 30 to 60 seconds for 2 halves, checking after the first 30 seconds.
- Cool briefly if necessary and serve.
