Crunchy Corn Salad
This super easy, tasty corn salad gets blended with ranch dressing for a refreshing, healthy side that'll be a surefire mainstay throughout the year. Using Hidden Valley® The Original Ranch® Dressing, you can create wonderful comfort food in minutes.

Yield: 4 - 6 servings
2 1/2 cups fresh or frozen corn kernels, thawed and drained
1 small red onion, finely chopped
6 slices of turkey bacon, crumbled
1 cup cherry tomatoes, sliced in half
1/3 cup Hidden Valley® The Original Ranch® Dressing
8–10 whole Boston or butter lettuce leaves, rinsed and dried
4 tablespoons freshly chopped basil
- In a large bowl, combine the corn, onion, turkey bacon, and cherry tomatoes. Gradually stir in the Hidden Valley® The Original Ranch® Dressing and toss until well coated.
- Arrange the lettuce leaves to make a small cup. Spoon the corn mixture into the lettuce cups and sprinkle with the chopped basil.
- Season with salt and pepper and serve chilled.
