2 Tablespoons cooking oil
1 cup onion - diced small
1 cup green pepper - diced small
2 cans (15 ounces each) pork and beans
1/2 cup bottled barbecue sauce (more or less to taste)
4 cups hot cooked rice
- Heat oil in a medium saucepan over medium-high heat. Add onion and pepper and cook for 3 - 5 minutes or until vegetables begin to soften.
- Add beans and barbecue sauce and simmer for 5 minutes until heated through. Serve over hot cooked rice.
