What's for dinner when the cupboard is nearly bare? This simple and quick meal is filling and tasty. Add a pound of ground meat to stretch it even further.

Hands-On Time: 5 minutes
Ready In: 10 minutes
Yield: Serves 4

Ingredients

2 Tablespoons cooking oil
1 cup onion - diced small
1 cup green pepper - diced small
2 cans (15 ounces each) pork and beans
1/2 cup bottled barbecue sauce (more or less to taste)
4 cups hot cooked rice

Directions

  1. Heat oil in a medium saucepan over medium-high heat. Add onion and pepper and cook for 3 - 5 minutes or until vegetables begin to soften.
  2. Add beans and barbecue sauce and simmer for 5 minutes until heated through. Serve over hot cooked rice.
