Microwave Omelet
Eggs cook surprisingly easily and quickly in the microwave. When you're in a pinch you can make a filling meal for breakfast or dinner in under five minutes. Go simple with a little cheese, or add any fixings you like.

Yield: 1 serving
2 eggs
3 tablespoons grated cheddar cheese
Non-stick cooking spray
Optional Additions
1/4 cup shredded fresh spinach
1 tablespoon chopped fresh chives or cilantro
1/4 cup pre-cooked sausage or chicken, chopped
- Spray the interior of a microwave-safe bowl with non-stick cooking spray.
- Break eggs into the bowl and mix with a fork. Sprinkle in any optional ingredients, and swish the bowl a little to cover the contents with egg.
- Microwave on high for 1 1/2 minutes. If the center is still raw, cook in additional 10-second bursts so as not to dry out the omelet.
- Top with a dollop of sour cream.
Notes:
If you add any optional ingredients, the omelet may take longer to cook through. Do not eat with the same fork you used to stir the raw eggs.
