Pumpkin Bread Pudding
Bread pudding is such a wonderful comfort food, and when pumpkin is added to the mix, it's pure decadence. This recipe is rich and delicious, but simple enough to put together that the kids can help, too.

Ready In: 50 minutes
Yield: 10 servings
Ingredients
10 cups cinnamon bread cubes (about 1 1/2 one pound loaves)
1 cup pecans - chopped
1/2 cup melted butter
2 cups pumpkin puree
2 large eggs
2 teaspoons vanilla extract
2 cups heavy cream
1/2 cup packed brown sugar
1/2 teaspoon freshly grated nutmeg
Directions
- Preheat oven to 350ºF. Grease an 8 x 11 baking dish.
- Toss bread cubes with melted butter and pecans and pour into baking dish.
- Blend together pumpkin puree, cream, eggs, extract, sugar and nutmeg. Pour over bread cubes and let stand for 15 minutes.
- Bake, uncovered for 40 minutes, or until puffy and golden brown.

This recipe was easy to make and absolutely delicious. Never made bread pudding before and it came out perfect. Love it!! Will be added to Thanksgiving dinner tradition.
