Apple Cupcakes

What's more delicious than a red, ripe, juicy apple? An apple look-alike! These cupcakes are easy to whip up and a great addition to any Fall-themed party.

Hands-On Time: 15 minutes
Ready In: 35 minutes
Yield: 12 servings

Ingredients

    1 boxed yellow cake mix
    apple juice - as needed
    1/2 teaspoon cinnamon
    2 cups white icing
    red food coloring - as needed
    6 cinnamon sticks - each cut in half
    6 candy spearmint leaves - cut in half horizontally

Directions

  1. Prepare cake mix using apple juice in place of water and adding cinnamon.
  2. Bake in 12 muffin cups as directed.
  3. While cupcakes are baking, tint icing with red food coloring so it is the color of ripe apples.
  4. Frost cupcakes and push a cinnamon stick in the center of each, sticking out slightly so it looks like an apple stem. Add a candy spearmint 'leaf' to each.

You could also use the Pirouette rolled wafer cookies from Pepperidge Farm for the stems.

I'd never serve cupcakes with cinnamon stick "stems". At best, they're awkward & messy for the eater; at worst, a little dangerous if the consumer tries to eat or swallow them.
I'll sub chocolate licorice whips; prettier, too. If the guests can eat "gummi" leaves without trouble, they can eat a couple inches of licorice whip.
