No-Bake Pumpkin Tartlets
Here's an easy holiday dessert you can make with your junior chefs. Knowing they've helped with the Thanksgiving feast may keep your kids at the table for at least five minutes before they politely ask to be excused.
Hands-On Time: 10 minutes
Ready In: 4 hours
Yield: 9 tartlets
1 (3.4-ounce) package vanilla instant-pudding mix
1 1/2 cups milk
1 (15-ounce) can pumpkin
1 teaspoon ground cinnamon
9 (3 1/2-inch) individual graham-cracker-crumb tart shells
Whipped cream for topping
- In a large bowl whisk together the pudding mix and the milk until smooth and thick. Add the pumpkin and cinnamon and whisk until smooth. Spoon the filling into the tart shells and refrigerate for 4 hours. Top with whipped cream and serve. You (and your kids) might want to decorate the tarts with Thanksgiving-themed sprinkles.
What's Good for You
Pumpkin is high in potassium, which is good for healthy heart function. Some doctors think that a potassium-rich diet for kids will help keep their blood pressure in check as they age.
