Molasses Cookies
These kid-friendly treats have just the right balance of sweetness and spice.

14 tablespoons butter, melted
2 cups sugar, divided
1/3 cup molasses
1 large egg, lightly beaten
2-1/2 cups all-purpose flour
1-1/4 teaspoons ground ginger
1 teaspoon cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
- Preheat the oven to 350 degrees. In a medium-size bowl, mix the melted butter, 1 cup of the sugar, and the molasses. Beat in the egg. In a separate bowl, mix the flour, ginger, cinnamon, baking soda, and salt. Gradually add to the butter mixture, stirring until a soft dough is formed.
- Shape the dough into 1-inch balls, then roll each ball in the remaining sugar. Bake on an ungreased baking sheet for 10 minutes.
