Fruited Chicken Salad
Deli roast chickens are available almost everywhere nowadays. I pass them at the deli counter and then again in heated bins at the check-out at my favorite store. These are good for so many things and a quick alternative for nights when everything seems to be running behind. This is one of the tastiest ideas I have for these birds.
Hands-On Time: 15 minutes
Ready In: 15 minutes
Yield: 6 servings
1 deli roast chicken, meat only, shredded
6 cups salad greens (a blend works well)
1 mango, peeled and diced
1 kiwifruit, peeled, halved and sliced
1 cup hulled and sliced strawberries
1/2 cup sliced red onion
1/2 cup each red and yellow bell pepper
1 cup raspberry vinaigrette or other fruit blend salad dressing
- Toss greens, fruits, onion and bell pepper in a large bowl and divide among 6 plates.
- Top with shredded chicken and drizzle with salad dressing
Change things up by using halved grapes, diced apples, sliced peaches or plums, and add your favorite nuts as a garnish.
