If you're a mouse in the market for a tempting Mother's Day treat, it's hard to beat a plateful of cheese. But if your name happens to be Jacque or Gus, and you have access to Lady Tremaine's kitchen, here's how you can make a favorite snack even sweeter. Cut up white chocolate to resemble slices of Swiss and cheddar and serve them with pastry "crackers."
- Round cookie cutter (about 2 1/4-inch in diameter)
- 1 pie crust pastry (for a 9-inch pie), thawed according to the package directions
- Baking sheet
- 1 cup white candy melts
- Small microwavable bowl
- Wooden spoon
- Yellow food coloring (optional)
- Butter knife or straight spatula
- Waxed paper
- Small round or oval fondant cutter (optional)
1. Heat the oven to the temperature indicated on the pastry box.
2. Use the cookie cutter to cut round "crackers" from the piecrust pastry and arrange them on the baking sheet, spaced apart. Use the tip of a toothpick to make 7 small holes (1 in the center and 6 spaced evenly around it) in each cracker.
3. Bake the crackers until the edges just start to turn brown, about 15 minutes. Then transfer them to a wire rack to cool.
4. Meanwhile, make the cheese by melting the candy melts in the microwave according to the package directions and then stirring it until smooth. If you want your "cheese" to have a yellowish hue, stir in a drop or two of food coloring.
5. Spread the candy on a sheet of waxed paper to about 1/8-inch thickness, using the knife or spatula to smooth the top. Let the candy set up for a few minutes, but slice it into small squares while it's still slightly soft. If want to make Swiss cheese, use a small oval or round fondant cutter to 1 or 2 holes in each slice.
6. Arrange the crackers and cheese on a dish or tray and serve. Makes 18 to 20 crackers and slices of cheese .
