Simple Quesadillas
Quesadillas are one of the quickest, easiest kid-friendly meals you can make for dinner, snacks, or to pack in a lunch box. Cut one into strips for sharing, or leave it whole to be eaten like a taco. The simple recipe with just cheese can be made in only a few minutes. Add more ingredients for a fuller meal, though allow another minute or two to cook through.

Yield: 1 quesadilla
1/2 cup shredded cheddar cheese
1 medium-size flour tortilla
Optional Ingredients
1/4 cup cooked shredded chicken
1/8 cup black beans, drained
- Heat a non-stick skillet to medium. No butter or oil is necessary.
- Lay the tortilla in the pan and sprinkle cheese around one half. Add any optional ingredients on top of the cheese, and add a little more cheese on top of that. Let sit for a minute, or until tortilla becomes soft, then fold over.
- Cook about 2 minutes on each side, until the cheese is melted and tortilla is golden and a little crispy. Serve with a side of mild salsa or sour cream for dipping.
Note
Once the tortilla is folded over, you can add another tortilla to the empty half of the pan, and start a new quesadilla there while the first one is cooking.
You can pack these for a school lunch after the quesadilla cools by wrapping in a paper towel (to keep the tortilla from getting soggy), and placing in a zip-top bag or aluminum foil.
