A slight variation and one of my favorites is the California Chicken Spaghetti. Very easy to make and extremely flavorful. If you would like, try this recipe on this site: http://family.go.com/food/recipe-ar-16300-california-chicken-spaghetti-t/

Oh, or pesto.

I'll agree to disagree. I love pasta whether al dente or mushy, as long as it's covered in a yummy marinara!

I agree with Photo-Drew. Although I am not Italian, I never liked al dente pasta either. Even after trying it in "authentic" Italian restaurants where I live. I put authentic in quotes because it's really hard to know what's authentic or not in the US even if it is claimed. There's a good pasta dish that my wife makes. I'll get her to post it on here.

Call me a Philistine, but I never liked al dente pasta. My family is from a largely Italian town in Ohio, and none of the meals I ever had there had pasta that wasn't cooked all the way through. It wasn't mushy, just not with the bite. Al dente seems like a trend someone tried to pass off as gospel. Maybe I'll have to go visit my family in Italy to settle it once and for all.

My tip is NOT to mix your sauce and pasta before it gets to the table. That way, if you have leftovers, you won't have to eat mushy pasta the next day for lunch. Cook the pasta al dente and put the extra aside and it'll taste (almost) like new the next day.

One of my favorite pasta dishes is chicken caesar pasta. Cut up some grilled chicken (a great way to use leftovers), and combine it with bowtie pasta, some lite ceasar dressing, fresh baby spinach, and a little fresh parm sprinkled on top. My family devours this dish when I make it. It's delicious warm or cold, too!
