Mike's Favorite Grilled Cheese

From the Disney Family Editors: The classic quick hot sandwich can be dressed up with sliced deli meat or tomatoes. It also makes a great lunchbox stuffer.

A good way to make a grilled cheese sandwich in a nonstick pan.

Yield:1 serving
Ingredients
 2 slices bread
2 tablespoons butter, divided
2 slices processed American cheese
Directions
  1. Heat a small skillet to medium high heat. Spread a thin layer of butter on one side of both bread slices; place one slice bread, buttered-side-down, in hot skillet. Immediately place both cheese slices on bread and cover with second bread slice, butter-side-up. When first side is browned, turn over and brown other side. Remove from heat and let cool 2 to 3 minutes before serving.

Sure the kids love it, but did you see the total fat and sodium?!? I tried using both "I Can't Believe It's Not Butter" on the bread and butter flavored non-stick spray on the pan. Using the sprays helps the sodium a bit too, but the culprit there is the cheese. One slice is usually enough. My daughter never noticed a difference, except that I was willing to make grilled cheese more often!
