Peanut Butter and Apple Sandwich

From the Disney Family Editors: Shredding the apple as the recipe calls for will release a lot of juice, which can soak the bread if the sandwich isn't eaten right away. If you make it for a school lunch, substitute thin apple slices.

My kids love to spread peanut butter on their apples, so one day I thought I would take a favorite of theirs and just tweak it a little bit....viola, a peanut butter and apple sandwich. PB and J can get boring after a while and this provides a healthy alternative.

Yield:1 serving
Ingredients
 2 slices whole wheat bread
1 tablespoon peanut butter, or to taste
1 small apple - peeled, cored and shredded
Directions
  1. Spread a thin layer of peanut butter onto one side of each slice of bread. Place shredded apple onto the peanut butter, and place the other peanut buttered side of bread on top. Serve immediately.

I made these for snack one day when my son had his cousins over. The ages were two five year olds and an eight year old. My son took a bite and said "I don't like these." The eight year old didn't have to say anything, I saw the look on his face when he took a bite. The other five year old didn't mind them , but the funny thing is that she will eat spinach on its own anyway. I tried them and thought the texture was a bit odd and I could taste the spinach even completely cooled as the recipe suggested. Maybe only 1/4 cup spinach would work better. I may try and "fix" the recipe for our household.
