In Keys to Healthy Eating, the single most important change I made was to take the time to eat breakfast. Chasing a one year old around the house used to wear me out by noon, and now I have the energy to keep up with him. Eating breakfast also made a world of difference when lunch time rolled around. Normally I'd be ravenous and would grab anything and everything because I'd be famished. Now I can sit down and eat a sensible meal.
