It's great that you can "bury" vegetables in the pasta for kids who won't usually eat them. You could put any veggies in it and that is nice because it can change up the recipe each time you make it.
This was really easy to make but a bit messy with two and four-year olds helping (the "hands on" time was probably doubled by letting the kids help a lot). We were thinking it would be a great dish for a birthday party for kids, or some other kid-friendly event because it's easy and a dish that most kids would eat. This recipe is also easy to prepare ahead of time.
As adults, we seem to like just about anything, but when the kids really like something I think it should really get this "Family Tested" seal of approval. Our kids loved this - even more than we did!

I made this last night for dinner and it was great! I changed it up a bit, I miscalculated and didn't have the meat it called for, so I used double the veggies. I did find that using bigger chunks of vegetables meant that they would be crunchy. I personally didn't mind the idea, but some people may want the softer bite. I also took some friendly advice and used cottage cheese instead of ricotta. Some of the cottage cheese curdles did melt and the others just tasted creamy as you bit into them. THAT I will definitely do again! I had 2 casserole dishes of this lasagna. I am freezing some for a quick meal and eating on one for the next few days. Don't shy away from this recipe! It's FABULOUS! Overall this recipe gets an 8/10!

I made it as suggested and it was pretty bland. I used baby carrots and I guess I should have cooked them first (oops) because the crunch was weird- despite being cooked in the oven with everything else. Also, I don't think it called for enough mozzarella. My kids didn't like it at all and neither did my husband or I. Now I have a ton of it taking up space in my fridge. What a waste.

The instructions were a little hard to follow. Items 4 and 5 are duplicated information. The recipe doesn't say how much Parmesan cheese, so I just threw in what looked good. I used cottage cheese instead of ricotta as it is more moist and my kids like it better anyway. Time-wise it still took a lot of time. It still took 2 hours start to finish. It is actually better for young kids because of the small pasta (I used mini shells) and you don't have to cut up the large lasagna noodles. I saved half and put it in the freezer for a rainy day!

Does the lasagna really look like that? I like this recipe because it adds the vegetables which gives you the option to withhold the meat. I have to puree the vegetables because my kids still don't like to "see it".

This looks interesting. When I make "traditional" lasagna, one quick tip is that you do not have to cook the lasagna noodles. My mother shared this tip with me. Just prepare everything else like normal. When you start layering, just use the dry noodles. It is better if you make it and add a little extra sauce.

We made this tonight and it was a hit. I did deviate from the recipe a bit. I didn't have any ricotta so I used cottage cheese as a replacement. I also chopped up a shallot (would have used onion but out of those) and about tbsp of garlic powder as well. I did a mix of mozzarella and cheddar cheese and used fresh parmesan opposed to shelf parm. And for the veggies, we used matchstick carrots. It was an excellent way to hide the veggies from my toddlers and they absolutely loved it. I think I'll try some other veggies next time but the orange mixed with the red concealed them very well!
