Almost Lasagna
We make a version of lasagna that I call "Almost Lasagna" that is very versatile and easy to make ahead and heat later. Add a crusty bread and bagged salad, and dinner is complete!

- Brown meat and drain well, if necessary.
- While meat is cooking, stir together eggs, ricotta, grated Parmesan and salt and pepper.
- Mix cooked meat, macaroni, sauce and veggies. Add ricotta mixture and blend well.
- Coat a 9-by-13 baking pan with cooking spray or olive oil and spread half of macaroni mixture evenly over the bottom. Top with a cup of mozzarella and a healthy sprinkle of grated Parmesan. Add the remaining macaroni mixture and top with another cup of mozzarella and another sprinkle of Parmesan. Cover with foil.
- Coat a 9-by-13 baking pan with cooking spray or olive oil and spread half of macaroni mixture evenly over the bottom. Top with a cup of mozzarella and a healthy sprinkle of grated Parmesan. Add the remaining macaroni mixture and top with another cup of mozzarella and another sprinkle of Parmesan. Cover with foil.
- Heat your oven to 350 degrees F and bake the casserole for 20 minutes. Uncover and bake for another 10 to 20 minutes until the cheese on top is lightly browned and bubbly.

It's great that you can "bury" vegetables in the pasta for kids who won't usually eat them. You could put any veggies in it and that is nice because it can change up the recipe each time you make it.

This was really easy to make but a bit messy with two and four-year olds helping (the "hands on" time was probably doubled by letting the kids help a lot). We were thinking it would be a great dish for a birthday party for kids, or some other kid-friendly event because it's easy and a dish that most kids would eat. This recipe is also easy to prepare ahead of time.

As adults, we seem to like just about anything, but when the kids really like something I think it should really get this "Family Tested" seal of approval. Our kids loved this - even more than we did!

I made this last night for dinner and it was great! I changed it up a bit, I miscalculated and didn't have the meat it called for, so I used double the veggies. I did find that using bigger chunks of vegetables meant that they would be crunchy. I personally didn't mind the idea, but some people may want the softer bite. I also took some friendly advice and used cottage cheese instead of ricotta. Some of the cottage cheese curdles did melt and the others just tasted creamy as you bit into them. THAT I will definitely do again! I had 2 casserole dishes of this lasagna. I am freezing some for a quick meal and eating on one for the next few days. Don't shy away from this recipe! It's FABULOUS! Overall this recipe gets an 8/10!
