Everyone thought they were fun to eat - my kids referred to them as "little tacos." You have to prepare the meat and beans ahead of time, but it is easy for the kids to spread out the chips and scoop the beans and meat.

Charlie loved them. He normally doesn't eat beans, but in this case he had no problem! They loved sprinkling the cheese; adults had to do the sour cream as well. This is a great recipe for a potluck. They taste good hot or cold and they are easy to make. If you are doing this for a party, like we did, you need to buy a few bags of chips.
