Citrus Chicken
No-cook and grilling recipes are something you'll be hearing from me about all summer long. Not only do I appreciate the no-cook solution, I also enjoy the ease of few ingredients, and any recipe that passes those two requirements is high on my list of "must try." Recipes that have five or less ingredients are great, but a mere three is awesome, especially if there's no cooking involved.

- Combine everything in a large zippered plastic bag and marinate for 2 hours.
- Drain and discard marinade and grill chicken over medium coals (or medium heat on a gas grill) for 6-8 minutes each side or until juices run clear when chicken is pricked with a fork.

While I would have loved to have my husband cook this on our charcoal grill over some mesquite, it wound up raining the night I cooked this. So, I pulled out our George Foreman indoor grill and made it anyway. May have lost out on some of the flavor, but it was still delish!

We paired this recipe with the Lemon-Roasted Potatoes and thoroughly enjoyed our lemony evening. The lemon in the potatoes really helped bring out even more of the fresh citrus flavors of the chicken.
