Egg Whites, Turkey Bacon & Low-Fat Cheddar Tortilla Wraps
Yield: Serves 4
Ingredients
1 tablespoon olive oil
4 slices turkey bacon, cooked in microwave for 5 minutes, or until crispy
6 egg whites
1/2 cup reduced-fat shredded Mexican cheese blend or cheddar cheese
4 large flour tortillas
- In a large bowl, whisk egg whites and cheese until well-combined. Add in crumbled cooked turkey bacon.
- Coat a large skillet with nonstick spray and sauté egg, cheese and bacon mixture. Cook on medium-low heat, scrambling eggs until firm.
- Warm tortillas in oven or in sauté pan for 30 seconds.
- Divide mixture evenly among 4 tortillas, wrap up, and serve immediately.
