My sister wanted a dolphin theme wedding cake. Definitely a challenge. Cake topper is fondant dolphins with waterfall from top-side-bottom tier.

RECIPE INGREDIENTS:
  • 12", 10", 8" and 6" cakes. Make each cake a 2-layer cake. Buttercream icing. Fondant colored blue, green, brown, black, white, black/gray marble. Piping gel and gumpaste colored pink, green and blue. Cake stands and real flowers.
  1. A few days before, make 4 blue, 4 pink, 1 green gumpaste flowers and 10 green gumpaste leaves. This is for 10" cake. Cut out 8 leaves for palm treen. Use 2 cookie sticks and wrap brown fondant around them until thick enough to stand on its own. Let sit over night or a few days to harden. Make 8 rocks with marble fondant. Mold 2 dolphins with hands using thumb to form neck and pinch a small piece up for dorsal fin and pince a small piece on

  2. each side for side fins using blue colored fondant. Make a black hat with fondant and white viel with fondant and place on each dolphin. Pipe black eyes on each dolphin. Let sit over night. Day of wedding, decorate all 4 cakes with white buttercream icing. Pipe a "V" design around the top edge of each cake and loosely fill in top of cake and inside "V" with spiral swirls with icing. Place on cake stands and arrange on table. Place real

  3. flowers and candles around bottom of cake and fountain in middle of all 4 cakes. Using a cookie stick, place dolphins on top tier (do not do to early or fondant will start to soften and dolphins will droop (like my picture). Place 9 gumpaste flowers on 2nd tier with leaves all around them. Roll out a long 3" wide stip of thick blue fondant that will drap from top tier to side tier to bottom tier for water fall.

  4. Place on cake and use piping gel to cover fondant to look like water. Roll out a round circle for body of water at bottom of waterfall and cover with piping gel. Place rocks around water at bottom. Assemble palm trees and stick in cake on each side of water. Mold dolphin for bottom tier to jump out of water and stick in cake with cookie stick.
